The pickled anchovy salad is a fresh and tasty option to enjoy delicious marinated anchovies. Combine the anchovies with a selection of fresh vegetables, such as tomato, onion and pepper, all dressed with a touch of extra virgin olive oil and vinegar. It is an explosion of Mediterranean flavor in every bite.

Ingredients:
 · Pickled anchovies
 · Lettuce
 ·  Cherry tomatoes
 · black olives
 · Purple Onion
 · Extra virgin olive oil
 · Sherry vinager
 · Salt and pepper to taste


Preparation:
1. Wash and cut the lettuce into small pieces.
2. Cut the cherry tomatoes in half and chop the red onion into thin slices.
3. In a large bowl, toss the lettuce, cherry tomatoes, black olives, and red onion.
4. Add the pickled anchovies on top of the salad.
5. Dress the salad with extra virgin olive oil, sherry vinegar, salt and pepper to taste.
6. Mix well and serve.
