Pasta with anchovy sauce is an exquisite combination of flavors of the sea and the land. Ingredients:
 · Pasta of your choice
 · Pickled anchovies
 · Extra virgin olive oil
 · Chopped garlic
 · Chopped red chili (optional)
 · Chopped fresh parsley
 · Grated Parmesan cheese


Preparation:
1. Cook pasta in salted water according to package instructions.
2. Meanwhile, heat some olive oil in a frying pan over medium heat.
3. Add the minced garlic and minced red chilli if using, and sauté for a few minutes.
4. Add the pickled anchovies to the pan and cook briefly until they break down slightly.
5. Drain the cooked pasta and add it to the pan with the anchovy sauce. Mix well to coat the pasta with the sauce.
6. Sprinkle with fresh chopped parsley and grated Parmesan cheese before serving. Delicious!
